- Slabs of chalky rock in a sheet of intercalated clay. It is covered a 80% with stone. Poor soil very suitable for cultivation of Mediterranean woody plants.

- La Harvest marked by a very dry summer and a warm autumn and rainy in the last part. The harvest has been good in quantity and quality, the olives have been very unblemished. The picking has developed without any problem and 9 kgs of olives were needed to produce on litre of AUBOCASSA oil.

- Cold pressing at 27ºC max. temperature.
Each harvest, as with the wine, is capable of transmitting the sensations of the climatic vintage, and so is different from the others. The general guidelines for tasting AUBOCASSA however, are as follows:
- Colour: Yellow-greenish, slightly opalescent.
- Nose: Very intense aroma, citric hints, apple, cherry tomatoes, fresh artichoke and herbs. Green almond hints, fresh olive, aromas of unripe banana, pear, fennel hints.
- Palate: Fresh, silky, fresh almonds and vegetables. Well balanced in mouth, spicy almost imperceptible. Subtle and complex in both, mouth and nose.
It pairs with bread with tomato and salt, in mayonnaise.
Excellent to use in fresh, with raw vegetables, baked or grilled vegetables.
It provides an excellent touch to red fruits.
As completion of the dishes, splendid with soups, creams and stews.
It gives a delicate perfumed note in yogurts and desserts.
